Peel, chop and boil stokes purple sweet potatoes until soft then mash until smooth
Cream together butter, sugar, vanilla and cooled mashed sweet potatoes
Once creamed together, crack in the eggs one at a time continuing to beat and combine
In a separate bowl combine flour, baking powder and salt
Mix then add into the wet ingredients and stir until combined
Dough will be quite wet, scoop cookie balls and toss in icing sugar to coat then set on a parchment or silpat lined baking tray.
Bake for 10-12 minutes at 175 C (350F)
