Sweet Olive Oil Gel

This is a quick and simple recipe for a sweet, bright yellow, olive oil gel that goes well with lemon and chocolate desserts. It adds a hit of colour and an interesting flavour component to desserts.

Ingredients
  

  • 3 egg yolks
  • 100 g glucose
  • 250 ml olive oil
  • pinch of salt

Instructions
 

  • Mix yolks, glucose and salt together in a stand mixer with a whisk attachment
  • Slowly stream in the olive oil allowing it to emulsify and create a thick gel

If you can, try to use a nice olive oil as that will be the flavour that comes through primarily. I used this olive oil here, it's one of my favourites and the flavour is incredible: https://amzn.to/2HK6j5m (affiliate link) All you need for this olive oil gel is a few ingredients you likely already have in your kitchen, egg yolks, glucose, salt and olive oil. It is made a lot like a mayonnaise where we are emulsifying the olive oil into the egg and glucose mixture. The glucose however give this a super shiny and glossy finish which looks really lovely and smooth on plates. Note: This recipe is modified from a recipe by Chef Daniel Humm of Eleven Madison Park.
