Sweet Potato Cookies
Fluffy, sweet, naturally purple sweet potato cookies.
Ingredients
- 200 g mashed stokes purple sweet potatoes
- 115 g butter
- 200 g sugar
- 1 egg
- 1 tsp vanilla
- 280 g pastry flour
- 1 tsp baking powder
- 1 tsp salt
- icing sugar for rolling dough
Instructions
- Peel, chop and boil stokes purple sweet potatoes until soft then mash until smooth
- Cream together butter, sugar, vanilla and cooled mashed sweet potatoes
- Once creamed together, crack in the eggs one at a time continuing to beat and combine
- In a separate bowl combine flour, baking powder and salt
- Mix then add into the wet ingredients and stir until combined
- Dough will be quite wet, scoop cookie balls and toss in icing sugar to coat then set on a parchment or silpat lined baking tray.
- Bake for 10-12 minutes at 175 C (350F)
