Purple Sweet Potato Cookies

Sweet Potato Cookies

Fluffy, sweet, naturally purple sweet potato cookies.

  • 200 g mashed stokes purple sweet potatoes
  • 115 g butter
  • 200 g sugar
  • 1 egg
  • 1 tsp vanilla
  • 280 g pastry flour
  • 1 tsp baking powder
  • 1 tsp salt
  • icing sugar for rolling dough


  • Peel, chop and boil stokes purple sweet potatoes until soft then mash until smooth
  • Cream together butter, sugar, vanilla and cooled mashed sweet potatoes
  • Once creamed together, crack in the eggs one at a time continuing to beat and combine
  • In a separate bowl combine flour, baking powder and salt
  • Mix then add into the wet ingredients and stir until combined
  • Dough will be quite wet, scoop cookie balls and toss in icing sugar to coat then set on a parchment or silpat lined baking tray.
  • Bake for 10-12 minutes at 175 C (350F)
